Butternut Squash Tortellaci
Sage and Prosciutto Sherry Wine Cream Sauce

Since May of 2000 I have lived in the amazing Hamlet of Keene NH. It epitomizes small town living in New England, but it has a cosmopolitan touches that made it a great place to start Luca’s Mediterranean Café. Each year, Keene hosts a Pumpkin Festival and for a long time held the world record for most Jack o Lanterns lit at one time. My ode to Pumpkin Festival appears many ways on my menu and this was always a favorite with the colors reminiscent of the changing trees and the toasted walnuts giving that slight air of the holidays approaching. Using butternut squash ravioli or even plain pasta with butternut squash is a great alternative. Savory and sweet, this dish hits all the right notes and will make you crave Fall all year long.
Yield: 4 Servings
Butternut Squash Tortellaci 10 oz pk
Butter 1 1/2 tblsp
Walnuts 1/4 cup chopped
Shallots 1/3 cup finely chopped
Prosciutto 3 oz shredded
Fresh Sage 1 1/2 tblsp chopped
Sherry Wine 3/4 cup
Heavy Cream 2/3 cup
Ricotta Salata shavings for garnish
Preparation
BOIL:
Cook Tortellaci in large pot of boiling salted water until just tender but still firm to bite, about 8 minutes. Drain well.
TOAST:
Warm a sauté pan to medium heat and add walnuts and stir until slightly darker and fragrant.
SAUTEE:
Meanwhile, melt butter in skillet over medium heat. Add shallots, prosciutto and sage sauté until fragrant, about 30 seconds. Remove pan from heat source and add sherry wine and cream. Return to heat and turn to medium-high and boil until sauce is reduced to generous 3/4 cup, about 5 minutes.
SERVE:
Add Tortellaci to sauce; toss and season with salt and pepper. Divide between bowls. Sprinkle with walnuts and Parmigiano Cheese.

Luca films his TV show the third Tuesday of every month on location in the Design Center at Vermont Cabinetry and Monadnock Flooring on Production Avenue in Keene, NH across from the Monadnock Marketplace.
Luca loves to take his viewers on a journey to other lands and learn about other cultures through food. He has a wide variety of guests each week from local restaurateurs and business owners to kids in the community! You never know what Luca will be cooking up on the show!
We love to have people in the studio audience, so come on down at 10:00am and stay for one show or all four and see the action take place, taste the food and who knows; maybe you’ll end up behind the stove with Luca!!
“A Culinary Journey with Luca Paris” can be seen locally on Cheshire TV Channel 8 and around New England and the Country on a variety of Cable Access Stations. Locally the show airs on Sunday night at 5:30pm (the new show for the week), Tuesday night at 6:00pm and Friday night at 8:00pm. The show can also be viewed live, as it airs on www.cheshiretv.org at the same times.

Luca began is radio show with co-host Dan Mitchell over 10 years ago! They can be heard every Thursday morning at 9:00 – 10:00am on WKBK 104.1 FM and 1290 AM.
You never know what will be discussed from the wine they had at dinner last night to interviewing the hottest new cook book authors. One of their favorite parts is when listeners call in with questions!!
